Crustless Tuna Quiche

Serves 4


3 large eggs

100ml self-raising flour

12.5ml olive or canola oil

250ml low fat milk

1 small onion, sautéed

1/2 cup mozzarella

2 tins tuna, drained

Salt and ground fresh black pepper to taste

1 tsp mixed herbs

1 tsp mustard powder

1 cup whole corn kernels

80ml pepperdews (or to taste)



  1. Preheat the oven to 180oC
  2. Spray an oven-proof pie dish with Spray and Cook
  3. Beat the eggs, and then add the flour, oil, and milk. Beat again until well combined.
  4. Add the sautéed onion, cheese, tuna, salt, pepper, herbs, mustard powder, corn and pepperdews to egg mixture
  5. Mix until combined, and then pour into pie dish
  6. Bake for about 25minutes or until set and golden brown
